Prima della sboccatura affina sui lieviti per circa 24 mesi; fragrante e delicato, esprime al meglio le potenzialità del vitigno, in un territorio non facile.
Raffinato come aperitivo, si abbina con coquillage, crudi di mare, formaggi freschi e tartine a base di pesce.
